Valentine's Day Fudge

ModCloth's version almost looks too pretty to eat!
    Valentine's day is on the way and I seem to only be able to get it together in time to celebrate this day every other year.  This happens to be a "got it together" year, so not only will I be wearing my currently favorite red dress, but we have been busy making cards and sweets for each other for the past few days.  Because my oldest has food allergies, we make her her own chocolates and since the sky's the limit for the rest of us we decided to use ModCloth's recipe for Pink Fudge this year. 
    I made a little mistake by purchasing sweetened condensed milk instead of the evaporated milk called for in the recipe.  Since those two aren't interchangeable and the store was closed, I had no choice but to come up with my own recipe.  I used only four ingredients and the result was very tasty and looked quite similar.  I'll definitely try ModCloth's version next year.

The Recipe:
2 C. white chocolate chips
2/3 C. sweetened condensed milk
2-5 drops of red food coloring
1-2 dashes of sprinkles


Instructions:
--Line a 9x9 baking dish with parchment paper.
--Combine chips and milk in a pot.  Over low heat (almost as low as the burner will go) slowly and constantly stir mixture until all is melted.
--Add 2 to 5 drops of red food coloring depending on how pink you'd like your fudge to be.  I used 5 drops and they came out a little darker than I wanted.
--Pour into prepared baking dish and quickly cover with sprinkles.
--Let cool completely (about 4 hours).
--Cut into squares
--Share with loved ones and enjoy!
